Gummy Bear Cookies
I don't think my roommates knew what they had coming when they asked me to move in last month. My baking adventures included Brown Eyed Baker's Irish Carbomb cupcakes and Kitchen to Kitchen's Kool-Aid cookies.
On my 52 list, I had mentioned making gummy bear cookies; but I tweaked this recipe and used Kitchen to Kitchen's Kool-Aid cookies and added gummy bears halfway thru baking.
Here's Kitchen to Kitchen's recipe: nhttp://kitchentokitchen.blogspot.com/2010/03/kool-aid-cookies.html
1 pkg kool-aid (with no sugar) (I used the lemonade sugar)
1 1/4 Cups butter (I used salted butter and did not substitute additional salt)
2 eggs, beaten
1/2 tsp salt (I did not use salt in my recipe_
1 tsp baking soda
3 Cups flour
1/2 Cups sugar for dipping
First, I mixed the Kool-aid with sugar. Then I mixed the butter (melted) until the mixture was fluffy. Then I beat the eggs and added them until they were extra fluffy. Then I added the baking soda. Then I added the flour in one cup increments until everything was mixed well. I rolled the cookies into one inch balls, tossed them in sugar and then baked for eight minutes.
After 8 minutes I added the gummies in the center of the cookies. I baked for six more minutes.
The verdict: Everyone loved the cookies; but they said they could do without the gummies. Personally; I thought the gummies would have been better if I would have added them after the cookies were already baked. I also thought that the cupcakes were too sweet and could have been baked with a bit less sugar.
Lemon-cello cupcakes are next! I promise.
